I feel like this year is flying by! Its less than 2 weeks until Thanksgiving, then Christmas, then New Years, then…ahhhhh! Its going so fast!

My life has been crazy lately! Wedding, work, semi new appartment, etc. And I can’t quite get a grasp on everything! My goal is to slow down for the next few weeks and really get myself back into routine. We made tacos Friday, but before that I can’t even remember the last time I cooked! No cookings = we have been eating very poorly! I think I am starting to feel it too. I have been dragging lately, no energy, and lazy. I guess working 50-60 hours a week will do that to you also, but getting back into cooking and eating right will help.

I also need to unpack! I am determined to really make this new place a home. I lived at my other place for 3 years, and never finished unpacking! Yikes!

Newest hobby…PHOTOGRAPHY! I am addicted. We got  the Canon T2i that we wanted, and we LOVE it. Maddie does NOT like it. She hated getting her pic taken before, so being our full time model isn’t her idea of fun!

I am off to go do some menu planning for the week 🙂 baby steps right? But I will leave you with some pics from the wedding.

My Dress is done! Final dress fitting can be crossed off my list 🙂 It was super rainy all day today so I left it at the shop, but I did get to come home with part of my wedding dress surprise! Wouldn’t you love to know!! And its all wrapped up cute and ready for my wedding day!

My Bridal Shower and Bachelorette Party were last weekend! My girls did an amazing job! And everything was perfect, I couldn’t have asked for anything more 🙂 Carmel Apple favors = love!

Final food tasting was this past week too. Still full!

I cooked A MEAL this week! Shocked!

Spicy Eggplant Stirfry

  • 1 large eggplant cut up into chunks (about 1″)
  • 1/4 cup of onion, chopped
  • 1 clove of garlic, minced
  • fresh green beans (steamed in micro until about 1/2 cooked)

Mix the following in a bowl for the sauce

  • 1/2 cup of oyster sauce
  • 1 T soy sauce
  • 1 T spicy chili sauce
  • 2 T water
  • 1 T sugar
  • 4 T olive oil

Heat 2T oil in Wok, about med/high heat, then add eggplant, stirring constantly, brown eggplant for about 5 minutes. Add rest of oil if needed.

Remove eggplant from wok and put into a bowl, add the onion and garlic to the wok, turn heat down to med. Cook until onion starts getting soft and clear. Add eggplant back to wok and mix in green beans.

Pour in the sauce and let simmer for about 10 minutes. The sauce will thicken up. Serve with brown rice 🙂

I would say for my first experience cooking with eggplant, it went pretty well.

Food Wars!

Joe and I did a quick day trip the other week, up north to Minnesota! The night before, the new episode of Food Wars was on TV, and it happened to be in MN 🙂 We thought it would be nice to try both and determine our own winner, so we split a Jucy Lucy at each.

First up was Matt’s Bar.

Up next, 5-8 Club.

SPOILER ALERT: So the winner of the show was Matt’s Bar. Did we agree? Personally I voted for 5-8 Club! and……..so did Joe!!

We actually went up to MN to go to Ikea and shop for wedding stuff. The vases I originally liked weren’t as nice in person. But we did get some lanterns. Super cute!!

High of 75!!

Check this out! Temps in the 70’s this week!! Windy but at least 70!!

As usual, life has been busy. I have been walking Maddie and spending more time outside! It has been wonderful. With that said, less and less blogging 😦 but I will try to be more consistent.

Here are just a few things I have been working on:

Wedding flowers!! Browsing and doing a little price comparison. What have I found out?? Flowers are expensive!!!

Doesn’t the upclose image of the carnation look beautiful! I think it looks like fluffy soft layered fabric! And look at these cute as a button Green Button flowers!!

Joe and I started our pre-marriage class at church. There are a lot of couples, probably around 20-25 couples in the class with us. Its nice, each week they break it down into a different topic.

I did a little a lot of baking for a baby shower.

Finally got to use my super cute dark brown cupcake wrappers that I got from my parents for Christmas!

I hate that loooong weekends go by soooo fast! Finally taking a minute to sit and relax. I have some ribs in the oven and sticky rice soaking…yummm! Pics and recipe to come. I have not cooked or baked in so long. I have been slacking for sure!!!

I have found my wedding DRESS!! I LOVE IT!!! Sorry you will have to wait until the wedding for pics. I confirmed my reception place on Friday and got my wedding papers from the church! I am getting so excited 🙂 I have been doing a lot of wedding stuff this past week, shopping, online ordering, talking with a caterer, venue, centerpieces, etc. So much fun…in fact I like it so much I think I want to do somethings with weddings when I grow up.

I do have a slight rant to make. I am in a friends wedding in August so we went to look at dresses for the bridesmaids today. We got the worst service ever today! Weddings by Design is where we went and our consultant was Natalie…yep that is how mad I am, I am dropping names and I am blogging about it! Long story short, the consultant was the rudest person I have ever meet and the service was horrible! We didn’t even want to stay and give them our business, so we left. We have already found the dress at a different store thats further away but worth the drive. I used to work in customer service so I am pretty critical when I get bad service. I also understand the importance of recognizing and sharing good experiences. So in order to balance out the bad, I will share the last GREAT customer service I got. I went to Gateway Market to get some bacon, cheddar, jalepeno burgers but they were out 😦 but the guy at the meat counter went and made some from me while I shopped and then came out and found me when he was done! How nice was that?

Ok off to finish dinner. The ribs are starting to smell wonderful!!

Yes I have another 3 day weekend coming up! I have Friday off!!! But that is what I get when I carry over vacation days! 🙂 We have to use all our carry over days by April 1st of the following year so I  have 5 days to get rid of from 09. Such a hard thing to do.

Today it snowed again! When I was at work, schools started to get out for the day because of the weather, I was a little skeptical but when I walked out to my car…ugh couldn’t see and it was soooo cold and windy! That is when I decided it was the perfect night to stay in and do nada.

I was busy this weekend doing a lot of online shopping and regular shopping for wedding stuff. Fun! I know a wedding date would probably be nice…but we are working on that.

Food day tomorrow…gotta go whip up something delish! I need to only used ingredients I have on hand because I am NOT going to the store tonight. Should be fun to try to figure it out!
