I made these for all the kids when we got together for our friends Thanksgiving.

Kid Sushi

  • Rice Krispie Treats (you can do homemade if you are really ambitious)
  • Green Fruit Rollups (if you can find them)
  • gummy worms

Put 2 snacks right by each other and used a rolling pin to flatten out until about 1/4 inch thick. Put some worms in there and start wrapping the krispies around the worms.

I had to hunt high and low for green colored fruit rollups. I bought the multi colored ones, but grabbed these last minute. They were strips but worked out perfectly!

There you have a sushi roll! Cut into slices.

But I can’t! Between Lifetime and Hallmark movies (yes I am a sucker for their holiday movies) I have been planted on the couch, relaxing and loving it! No alarms in the morning, sleeping as much as I want….ahh peaceful! I think I have had more sleep these past few days than I normally do in weeks! This weekend is the last weekend until Christmas where we don’t have anything. It will be Christmas before we know it!

So a few posts ago I had shown step 1 for my Baked Brie with Cranberry Chutney. Here is the rest. I will warn you, I have no after pic because its in all our bellies!

Baked Brie with Cranberry Chutney

  • 1 sheet of frozen puff pastry
  • 1 wheel of brie
  • 1/2 cup of cranberry chutney (or any preserves that you want)

Thaw it out for a bit

Once its thawed a bit, unfold, and press the creases together again so there aren’t any holes.

Add the chutney to the middle.

Then get your brie wheel, or wedge and put it right in the center.

Take the edges of the puff pastry and wrap up the cheese. Make sure to seal the edges well. I didn’t have any eggs so I just used water. Cut off all the excess dough, then to get really creative get out a cookie cutter to make a little decoration for the top.

I thought the leaf was very fall appropriate 🙂 Brush with an egg wash. Since I had no eggs, I just used olive oil.  Bake at 375-400 degrees for about 30 minutes or until the ouside is golden brown. It will turn out a little like this and taste oh so delicious! I like to serve with crackers. And maybe some apples and grapes.

I guess I am just trying to make up for the last few months 🙂 And blasting you all with new posts!

Last year I made a baked brie for the first time. It was good, really good! But I am determined to make it even better this year. So step one, make the Spicy Cranberry Chutney to go inside. Last year I put cherry preserves in my baked brie, but I was watching The Food Network last weekend and the show was making Spicy Cranberry Chutney. Ding Ding Ding! That will go perfectly with my baked brie!

More to come! I already have my brie waiting for the homemade chutney 🙂 I can’t wait.

While I made this, I may or may not have nibbled on a few of these from our new Trader Joes!

Personally I don’t believe in reinventing the wheel. Its a waste of time! I think somethings must be made from scratch (sugar cookies), with real ingredients ( BUTTER!), but I also think some things are just as good as if it were homemade. Cornbread…Hello Jiffy. Yes the white and blue box, yes the super cheap…ummm I mean inexpensive…box.

Jalapeno Cheddar Cornbread Muffins

  • 2 Boxes of Jiffy Cornbread mix (mix ingredient per box instructions)
  • 1 Cup of shredded cheddar
  • 2 fresh jalapenos (one sliced and one diced)
  • liners to line your muffin tins

Mix in the chopped jalapeno and cheddar to the cornbread mix.

I like to use my pampered chef cookie scoop to fill muffin tins, one overflowing scoop is the perfect amount.

Once you have filled the tins, I use a little extra cheddar and sprinkle on top of each. Then I take the sliced jalapenos, and put one in the center of each.

Bake according to the directions on the box. I use the toothpick trick, when it comes out clean they are done. Remove from the tins, and put on a cooling rack.

Then enjoy! These will be enjoyed by Joe and his friends at their tailgate cheering for ISU! nom nom nom

Whirlwind

I feel like this year is flying by! Its less than 2 weeks until Thanksgiving, then Christmas, then New Years, then…ahhhhh! Its going so fast!

My life has been crazy lately! Wedding, work, semi new appartment, etc. And I can’t quite get a grasp on everything! My goal is to slow down for the next few weeks and really get myself back into routine. We made tacos Friday, but before that I can’t even remember the last time I cooked! No cookings = we have been eating very poorly! I think I am starting to feel it too. I have been dragging lately, no energy, and lazy. I guess working 50-60 hours a week will do that to you also, but getting back into cooking and eating right will help.

I also need to unpack! I am determined to really make this new place a home. I lived at my other place for 3 years, and never finished unpacking! Yikes!

Newest hobby…PHOTOGRAPHY! I am addicted. We got  the Canon T2i that we wanted, and we LOVE it. Maddie does NOT like it. She hated getting her pic taken before, so being our full time model isn’t her idea of fun!

I am off to go do some menu planning for the week 🙂 baby steps right? But I will leave you with some pics from the wedding.
