My Dress is done! Final dress fitting can be crossed off my list 🙂 It was super rainy all day today so I left it at the shop, but I did get to come home with part of my wedding dress surprise! Wouldn’t you love to know!! And its all wrapped up cute and ready for my wedding day!
My Bridal Shower and Bachelorette Party were last weekend! My girls did an amazing job! And everything was perfect, I couldn’t have asked for anything more 🙂 Carmel Apple favors = love!
Final food tasting was this past week too. Still full!
I cooked A MEAL this week! Shocked!
Spicy Eggplant Stirfry
- 1 large eggplant cut up into chunks (about 1″)
- 1/4 cup of onion, chopped
- 1 clove of garlic, minced
- fresh green beans (steamed in micro until about 1/2 cooked)
Mix the following in a bowl for the sauce
- 1/2 cup of oyster sauce
- 1 T soy sauce
- 1 T spicy chili sauce
- 2 T water
- 1 T sugar
- 4 T olive oil
Heat 2T oil in Wok, about med/high heat, then add eggplant, stirring constantly, brown eggplant for about 5 minutes. Add rest of oil if needed.
Remove eggplant from wok and put into a bowl, add the onion and garlic to the wok, turn heat down to med. Cook until onion starts getting soft and clear. Add eggplant back to wok and mix in green beans.
Pour in the sauce and let simmer for about 10 minutes. The sauce will thicken up. Serve with brown rice 🙂
I would say for my first experience cooking with eggplant, it went pretty well.
