To get to the other side so I could roast it and gobble it up!!

Not to brag or anything…but my $2.50 chicken was DELISH!


3 lb chicken (mine didn’t have any insides)

3-4 Tablespoons of olive oil

Your favorite seasonings

Black Pepper

Garlic Salt

1/4 large onion

1/2 lemon (I didn’t have one so I used a lime)

3-4 cloves of garlic

Clean the chicken and pat dry. Mix the oil and seasoning together…I probably used about a teaspoon of each. See picture below for what I used. Rub it all over your chicken. Recipe inspiration.

I stuck the onion, garlic and lime in inside the chicken.

I baked at 425 degrees for an hour and thirty minutes. I let the chicken rest for 15 minutes, then dove it! I ate it with fresh steamed broccoli.

Seriously I never want to by another roasted chicken from the store again!

I am off to chillax…I worked a long 11 hours today and I am beat! Game 7….GO LAKERS!!!

PS: Trying to take good blog pictures and prep the chicken was hard 🙂 I was a raw chicken mess…so I had to sanitized each step along the way

Graduation Day Has Arrived!

I feel like I just graduated from HS. I had my test today at 1 pm and ever since then, I feel soooo freeeee! Ok not quite that freeeee. But I do feel happy to have it done, pass or fail. I feel like I have my evenings free, I feel like I can cook dinner again, workout, laze around, chill, and do nothing. Which is pretty funny since I procrastinated and did all those things anyways when I should have been studying. The one thing I don’t have anymore is the strong urge to CLEAN. Funny how that works out isn’t it 🙂 Every night when I would read, I would be like..”hmmm I should vaccum…hmmm I really should clean the bathroom…etc etc.” Tonight post-test I am sitting here thinking… “I don’t want to clean! I don’t want to do laundry! BOOOOOO!” So instead I am sitting on the couch watching TV and looking at my new Real Simple that came in the mail today.

Sorry for all these picture-less posts! I actually haven’t really cooked much this past week and a half. But I will get back at it soon. I have that chicken to roast up after all!

There is nothing better than waking up to the sound of thunderstorms…just laying there knowing you have don’t have to get up for work…ahhhh love it! This week was rough though, there were a few sleepy thunderstorms mid week and it made it SO HARD to wake up.

The rainy weather makes today a perfect day for a roast! YUM… already have it in the crock pot for tonight’s dinner, can’t wait. I also go a WHOLE chicken at the store for only $2.50! So that will be made this week at some time. I love getting rotisserie chickens from the store, but at this price I just had to try it. I am going to use The Pioneer Woman’s recipe for this, but probably change it up a bit. That will be later this week…cause I am sure I will have some roast leftovers to eat up…I see bbq pulled pork sandwiches in my future 🙂

Ok I am off to study, workout, and check out my church’s website to find a new service (I usually go to church on Thursday nights, but they are taking the summer off so I need to find a new service to go to!).

Memorial Day weekend was wonderful! A much deserved loooong weekend and I enjoyed every minute of it. I slept in everyday and ate grilled food everyday, ahhh its a wonderful life 🙂

I even made my own Jucy Lucies! Remember our trip to MN??

This recipe will make 6 very large burgers!

I started by mixing 2 lbs of lean ground beef (I used lean because I was adding fat aka bacon), 4 strips of cooked bacon crumbled, green onion to taste, jalepenos to taste (I ♥ spicy), salt/pepper, and a splash or 2 of worcestershire sauce. I used this handy Pampered Chef tool to mix it all.

I made 12 equal meat balls (2 per burger).

smooshed it out, I started with my measuring cup but ended up using my fav kitchen tool, my hands!

once that is flatten out, I added a slice of cheeeeese. I bought a special cheese, but I think I would have preferred a regular ole’ Kraft American single…but this still tasted great.

add a patty to the top and seal the edges

Then throw this on the grill! I usually have my burgers med well, but grilled these until well done because of the cheese in the middle. Make sure you seal the edges so no cheesy goodness escapes.

I served my burgers with my mama’s baked beans. 

1 can of baked beans




brown sugar

cooked BACON, crumbled

bake at 400ish for about 15-20 minutes (I baked in my toaster oven so I wouldn’t have to turn on my oven just for my beans).

check out the melty cheese in the middle…it was really good…be careful cheese in the middle it hot and things will get messy
