Maddie and I went on a walk after work today! When we got home she couldn’t get enough water…I added some ice to her bowl for a special treat. She was one hot dog!

For dinner I did my own version of Buffalo Wild Wings Asian Zing sauce.

I mixed Sweetened Chili Sauce

and this DELICIOUS homemade hot sauce! I went to my friend’s mom’s house yesterday and she had just made this. She gave me my own container of sauce. Its sooooo spicy and goooood! It’s as spicy as it looks.

then I added a pinch of hot water and stirred. That’s it!

1/4 cup of Sweetened Chili Sauce

1 teaspoon of hot sauce

1 Tablespoon of hot water

I heated up some boneless wings from the freezer, made sweet potato fries and steamed some broccoli.

Dinner is served!!

Baked Tilapia

Ingredients

4 Tilapia fillets

1 cup of panko

1/2 cup of grated parmesan cheese

Seasoning of choice

black pepper

I mixed the panko, cheese, seasoning, and pepper together on a plate. I rinsed each fillet, then coated both sides with the crumb mix. I baked on a cookie sheet (I greased with olive oil) for about 15-20 minutes, around 350 degrees, until golden brown and cooked through. I was able to flake the fish apart with my fork to check and see if it was done.

If you don’t have panko I am sure normal dried bread crumbs would work too. I had started to bake my sweet potatoes in the oven for about 5 minutes prior (olive oil, salt and pepper), then added my fish to the same cookie sheet. They were done at the same time. I thought it was a pretty quick and easy weekday meal!

V-E-T Day

Ok so my strawberry plant wasn’t looking so hot. The bag holder thing was pretty cheap, so I moved them to a large pot. Hopefully this will work?! I only moved 1-2 actual plants…and I moved some roots over? mmm not sure if you can plant roots and have something come from it?

I planted my little deck garden today!

This morning didn’t start out so great, well it did for me, but not for poor Maddie. Today was V-E-T day! 😦 Started with a fun car ride (which is kind of deceiving for her since the way to the V-E-T is the same route to the D-O-G P-A-R-K), until we pulled into the parking lot, then the shakes began. I remember when I was growing up, our dog Tibi did the same thing when she would go to the V-E-T. Shakes, big puppy dog eyes, gulp gulp…dread!! She did great though, and is good until next year.

All the Single Ladies

Notice something? I was all out of sorts today. I woke up late, missed my turn on my way to work (don’t ask), and forgot my ring at home. Single all day long!! Also check out my tan line 🙂

So all day I kept looking down and kept having mini heart attacks. “(sharp intake of breath) I lost my ring, oh wait, it’s at home (big sigh of relief).”

Beware TMI ahead!

The bathrooms at work have these little lights above each stall. So I am not going to lie, every time I go to the restroom, I sit there and stare at my ring. I missed doing that today.

So here I sit, ring on my hand, scotcharoo in my belly, relaxing and soooo happy its Friday!

I feel like its super rainy right now, more so than usual, but I don’t really know….just an observation! I hope May showers bring strawberries from my plant, BUT I have a feeling it won’t. Last I looked, the plant wasn’t looking so good.

New addiction for the month?? Grapefruit! Love them!

I am still in love with sweet potatoes. Check out these monsters I got at the store. These were seriously some of the smaller ones!

Pie Day

I think my pie went over well. Its all gone! Here’s the recipe.

I use my favorite premade pie crust – hey nothing wrong with that!! Follow the instruction on the box to line your pie plate. I used a tart plate, it was a little bigger and I thought it would be pretty.

In a bowl mix:

3 cups of fresh rhubarb (my sweet mum did this for me…probably 1/4  inch pieces)

2 cups of quartered strawberries without the stems

1 cup of sugar

3/4 cup of flour

1/4 cup of corn starch

juice of 1/2 a lemon

Let this sit for 30 minutes, the juices will turn the dry mix into a nice thick sauce.

In a separate bowl mix:

1/3 cup of butter

3/4 cup of sugar

1 cup of flour

mix together with a fork or pastry cutter to make the crumb topping

Bake pie on the middle rack at 400 degrees for about 40 minutes. I cover mine with foil so the top won’t brown too much, then let the top brown for the last 15 minutes. Also juices will drip so you might want to put foil on the bottom of your oven.

Tips for next time: I think will use less crumb topping, when it baked it spread out and I wish I could see more of the fruit inside. Also it wasn’t as crispy on top. If I were using a traditional 9″ pie plate, I would cut back on the filling for sure. This plate is bigger and as you can see the filling spilled out quite a bit.

Overall the pie was great. A good mix of tart and sweet. Next time I will enjoy warm with vanilla ice cream! YUM!

Remember that beautiful plant Joe got me for Valentine’s Day?? I am afraid it might have fallen victim to my not so green thumb!

I passed my test…so for a treat Pizza Hut for dinner!! I just took my Strawberry Rhubarb pie out of the oven. A little experiment, I have never made one before. Here is a little sneak peak! Pics and recipe to follow. I am off to go relax and enjoy my study free night. Then time to hits the books again for another test on June 11.

Well I am glad I got to go enjoy the day when I could! Our visit to the dog park turned from blue skies to rainy drops in  5 minutes flat! Sorry for the fuzzy iphone pics!

I still have lots to do on my list, that means I want to do everything I shouldn’t be doing right now…like blogging, updating pics on Facebook, etc. Procrastination is my middle name.

Today is BEA-U-TI-FUL!

So I am keeping this short and sweet so I can go out and play (and study – boo). Joe and I went to his cousin’s wedding in Omaha yesterday, it was very nice. I started my strawberry plant a few weeks ago, so I was finally able to hang it up! I hope this works!!

Kale chips!! What did I think? Not bad, Joe actually didn’t mind them either. They aren’t potato chips thats for sure, but they aren’t bad 🙂 Tuna Helper never happened the other day, so I made a turkey panini and had kale chips. Yum!!

Ok I am off to play, study, grocery shop, workout, blah blah blah…basically enjoy the day!! 🙂
